Making flourless cookies is the easiest way to enjoy gluten-free cookies. Flourless peanut butter cookies are very basic and you can dress them up a number of ways, by mixing in an ingredient, topping them, or making a cookie sandwich. There are also flourless chocolate cookies, meringues, and macaroons.Oatmeal cookies or monster cookies are often made with just oats or perhaps with a few extra oats that have been ground into flour to bind the cookies. So as long as you use certified gluten-free oatmeal, you are good to go to make recipes like these Trail Mix Monster Cookies.Many recipes call for using a store-bought, gluten-free, all-purpose flour blend, which is fairly easy to find and some work quite well by just substituting in your favorite cookie recipe.
