Meatless Meals for Lent

- Baked Cheesy Broccoli & Shells: Nobody will ever miss the meat in this tasty baked pasta dish! It’s so hearty and delicious, the whole pan will be devoured in no time. Plus, the kids won’t even care that they’re eating “green stuff” when it’s layered with so much pasta and cheese!
- Shrimp Fried Rice: I know some say seafood is okay during Lent and some say it isn’t, but if you fall into the first category, you will love this one! A take-out classic made easily at home, and budget-friendly too! Plus, if you fall into the second group, simply omit the shrimp and you still have a tasty, satisfying meal.
- Tuna Salad: This is something I’ve been making since I was a teenager, which is great in a packed lunch for work or school, but I love to serve it as a simple sandwich supper. After a long day, there’s just something so comforting about an easy, but filling, sammie for our evening meal. I love to serve it on bagels with a salad, or fruit on the side.
- Mexican Black Bean “Lasagna”: Put a little Latin flare into your Lenten meals with this scrumptious, easy-to-make layered dish the whole family will love. With the addition of black beans, it’s still filled with protein, making it a stick to your ribs kind of dish. Serve it with some tortilla chips and my Restaurant-Style Salsa on the side!
