What is Sous Vide?

If you aren’t familiar with sous vide, it’s a french term which translates to “under vacuum.” The concept of sous vide is that you place your food in a vacuum sealed bag and your food is cooked while submerged in temperature controlled water. The water temperature is controlled by an immersion circulator. Sous vide isn’t a new concept; it’s been used by steakhouses for ages. Only recently though, it seems sous vide has become a popular kitchen tool for home cooks. We aren’t talking just steaks and pork either. This method is great for just about any protein including shrimp and fish, side dishes like potatoes and other vegetables, and very recently I’ve learned about sweet treats like creme brûlée!
